None – didn’t fancy toast this morning and ran out of time while I was thinking about it
2 slices of seeded bread with cream cheese and smoked salmon (check the packet of this as some contain sugar)
Tea with milk
Latte – my very first without sugar; it was very bitter, but the aftertaste was nice
Hot chocolate – made with Sainsbury’s cocoa powder (no sugar) and organic whole milk – wasn’t too bad really, same as the latte
I went to the Trump protest outside Downing Street and didn’t get home until 8pm, by which time I was starving. I quickly threw together one of my favourite pasta dishes, with leftovers for tomorrow.
1 x red pepper
1/2 x red onion
1 x garlic clove
1 x organic chicken breast (skinless)
3 x closed cup mushrooms
1 large spoonful of butter
1 large spoonful of cream cheese
15 pieces of spinach & ricotta tortelloni (Sainsbury’s has no sugar)
Parmesan gratings for on top
Chop the pepper into small strips, cut the onion into tiny cubes, crush and chop the garlic, peel and slice the mushrooms, slice the chicken breast into strips.
Boil a small saucepan of water for the pasta. Heat a small/medium frying pan and melt most of the butter (save some for the pasta). Add the garlic and the chicken. Once the chicken is white all the way round, add the rest of the veg and stir occasionally for 5 minutes.
Put the pasta in the water and simmer for 3 minutes (or whatever the packet says). Drain the pasta, put in a bowl and coat with the remaining butter.
Serve half of the chicken and veg from the frying pan on top of the pasta (save the rest for tomorrow). Top with a dollop of cream cheese and grate some parmesan. Enjoy!
