Day Nine – 2nd February 2017

Breakfast:

2 slices seeded toast with organic slightly salted butter and a smidge of Marmite

Snacks:

Monkey nuts
1 banana (mid-afternoon)

Lunch:

Leftover quiche from last night’s recipe

Drinks:

Tea with milk
Coffee with milk
A glass of milk
Water

Dinner:

Chicken Kievs (serves 2)

2 x organic chicken breasts
1 x slice seeded bread blended into breadcrumbs
1 x organic egg
2 x knobs of butter
2 x garlic cloves
1 x packet of baby corn and mange tout

Preheat the over to 180c (fan oven).
Cut any gross bits off the chicken breasts and slice a pocket into the side. Open it up as far as you can without breaking through the flesh.
Chop the garlic cloves as small as possible and mix with the butter. Scoop half into each chicken breast pocket and close over. Pin in place with a cocktail stick if necessary.
ScatterĀ the breadcrumbs into a shallow dish, and break the egg into another. Whisk the egg so the yolk and white are blended. Coat the chicken in the egg, then roll in the breadcrumbs.
Lay them on a baking tray and put in the oven for 20-25 minutes until no longer pink inside or juices run clear.
Boil the mange tout and baby corn in a saucepan of water for the last 5 minutes of the cooking time.
Serve immediately.
