Day Twelve – 5th February 2017

Breakfast:

2 tinned plum tomatoes, 1 poached egg, 2 pieces of bacon

Drinks:

Latte
Tea with milk

Snacks:

None

Lunch:

A delicious slow-cooker stew of chicken, turkey stock, broccoli, carrots, swedes, sweet potato, new potatoes, with bread and butter. The meat and veg were in the oven for an hour, then the slow-cooker for another hour. Normally, it would be in the slow-cooker for 4 hours. I will be trying out some more slow-cooker recipes since this was so tasty.

Dinner:

Getting back late from North Wales, we didn’t feel like anything complicated, so we made a pasta dish again.

1/2 x red onion
1 x orange pepper
1 x garlic clove
sprinkling of paprika, curry powder and cumin
4 x baby plum tomatoes
1 x medium round tomato
20 pieces each x spinach & ricotta tortelloni
splash of sunflower oil

Slice the onion, garlic, pepper and tomatoes. Heat the oil in a medium saucepan. Boil a saucepan of water. Fry the onions with the paprika, curry powder, and cumin, then add the garlic, pepper and tomatoes. Add the pasta to the boiling water and cook for the specified time. Drain the pasta and add to the frying pan and mix over a low heat. Serve and eat immediately.
